Cider production started in December 2011. Fermentation, maturation and aging took place in the basement of the farm in Ignaców. All proved to be important: variety and quality of apples, way the fruit were crushed and method of maceration before pressing juice, strains of yeasts used, temperature in which the fermentation process took place. Later on it was crucial to merge young cider from above the lees formed on the bottom of the tanks and to control the maturing drink. Our cider was poured into bottles in December 2012.
