Our cider adventure began at the end of 2011. Inspired by great Herefordshire cider traditons, after few months of theoretical preparation, we started in the autumn trial fermentations. For half a year we examined the usefulness of different varieties of apples and strains of yeasts. We analyzed the course of fermentation and maturation. The results were very promising.
